Ingredients:
- 1 cup regular cooking oats
- 2 cups Planet Oat Original
- 1 cup almond flour
- 2 eggs
- 1 1/2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 medium ripe banana
For serving:
- Salted butter
- Sliced banana
- Pure maple syrup
- Cinnamon
Directions:
Add oats to a high-speed blender and pulse until a coarse flour forms.
Add all the other ingredients to the blender and blend, lid on, until batter is smooth.
Spray a large non-stick skillet with cooking spray. Heat pan over medium heat. When pan is hot, begin cooking pancakes, working in batches. Pour approximately 1/4 cup of batter into the pan for each pancake and cook until the pancake bottom is golden brown (check by lifting up an edge of the pancake with a spatula) and the bubbles in the pancake begin to pop and leave open holes, about 90 seconds. Flip and cook on the other side for another 60-90 seconds, or until both sides are golden brown. Repeat until all the batter is gone.
Serve pancakes with salted butter, sliced banana, pure maple syrup and cinnamon.

Ingredients:
2 tablespoons instant coffee
2 tablespoons cold water
1 tablespoon powdered sugar
1 cup Planet Oat Dark Chocolate
Optional, for serving:
Unsweetened cocoa powder
Directions:
Add instant coffee, water and sugar to a medium mixing bowl. Using an electric hand mixer, beat on low and then high speed until mixture becomes foamy, then creamy and smooth with stiff peaks (it should resemble coffee-colored whipped cream). This will take a few minutes.
Add ice cubes to two tall glasses. Pour 1 cup Planet Oat into each glass. Spoon whipped coffee atop Planet Oat. Dust with cocoa powder, if desired.
Serve with a spoon for mixing the whipped coffee layer with the Planet Oat.

Ingredients:
1 cup Planet Oat Dark Chocolate
(if popsicle molds hold more than ¼ cup liquid per popsicle, increase Planet Oat amount accordingly)
Optional, for serving:
Chocolate syrup
Mini marshmallows
Directions:
Pour ¼ cup Planet Oat each into 4 popsicle molds, leaving about ¼ inch at the top of the mold to allow space for freezing. Place fudgesicles into freezer and freeze 8 hours, or overnight.
When ready to eat, remove fudgesicles from the molds (run them under warm water to help release the fudgesicles from the molds easily). Serve as is, or drizzle on one side with chocolate syrup and mini marshmallows.
