Fresh veggie noodles look like so much fun! Ready to savor, you can find them in our produce department. Green zucchini and yellow summer squash, golden butternut squash, dark magenta beets, and more……we love this trend! Versatile, sweet, savory and pretty, they are a top pick for a lower carb or gluten free lifestyle. Bonus, they add nutrients like Vitamin A and C, potassium, fiber and antioxidants. Beets: Spiralized beets can be enjoyed raw or cooked. Quick to cook, add them to casseroles, and soups, or spread evenly on an oiled sheet pan and roast for 10 minutes. Roasted beets, feta and mandarin oranges is an easy side dish. Or, combine raw beets with spiralized carrots, coleslaw cabbage mix, chopped apples and pecans with an apple vinaigrette for a pretty and delicious salad.
Carrots: Spiralized carrots are fun to add to chicken soup, use as a base for quiche, or get inspired with a savory side dish like steamed carrots and Full Circle Organic Peanut Satay sauce (in the Asian sauces section). Top that with some chopped cilantro and WOW your family and friends.
Zucchini and Summer Squash: We carry “zoodles” and the zucchini and summer squash combo – great for salads, subbing for or adding into pasta dishes (pesto potential!), or steam and top with olive bruschetta and grape tomatoes, or saute with garlic, sliced mushrooms, and top with parmigiana cheese.
