Family Meals – Fresh and Fast

September is a time the majority of us hit the reset button, pull out the calendar and get back to school and work routines. No doubt, many of us find we are already overcommitted before we even get started! Catching up around the dinner table is a great way to reconnect after these busy days, but getting that organized can be one more thing on that already long list. Don’t worry, we have your back with #TimeBetterSpent solutions to kick off National #FamilyMealsMonth, an annual celebration of all of the benefits every occasion you can eat together with family and friends can bring.

Sunday – Get ahead and power up Monday breakfast with a delicious, easy overnight oats and berries recipe (see below). September is also #WholeGrainsMonth! Give everyone the protein and #wholegrains they need for brain power, and know some morning time eating together will get the week off to a great start!

Monday – Go Can Crazy with a quick family and budget friendly chili recipe. Crunch some #wholegrain chips or fresh baked corn bread from the bakery and get all the news of the day at dinner.

Tuesday – First night for sports, Scouts, homework – way too many things to think about cooking too! Rustle up a fresh Rotisserie Chicken, bagged Fresh Express salad,  and the leftover corn bread. Fresh and fast!

Overnight Oatmeal and Berries by Jodie Fitz

 2 1/2 cups PICS Greek plain or vanilla yogurt 

2 cups PICS old-fashioned rolled oats

¼ cup PICS honey

1 teaspoon Full Circle cinnamon

1 cup PICS frozen blueberries or strawberries

In a large bowl, stir the yogurt, oats, honey and cinnamon together.  Divide the mixture among 4 airtight containers*.  Add the frozen berries on top.  Seal the containers and let sit overnight in the refrigerator.  Grab and go in the morning for a quick and easy breakfast!

*Small canning jars work great!

Macaroni and Cheese

8 oz. PICS whole wheat rotini

4 T. PICS unsalted butter (1/2 stick)

4 T. PICS all-purpose flour

2 cups PICS milk

Salt and pepper to season

Pinch Full Circle organic nutmeg

2 cups PICS shredded macaroni and cheese blend

1 cup crushed PICS snack crackers

2 T. PICS melted butter

2 tsp. smoked paprika

Cook pasta until tender, drain and rinse.

Meanwhile, melt 4 T. butter in a sauce pan and add the flour to make a roux. Cook for about 2 minutes, stirring constantly. Add the milk and whisk until smooth. Reduce heat and simmer for approximately 10 minutes. Remove from the heat and stir in the shredded cheeses.

Toss the pasta and sauce together to coat well. Spoon into a lightly greased casserole dish or 4 individual ramekins.

Combine the crackers, 2 T. melted butter and paprika. Sprinkle over macaroni and cheese, and place in a preheated 375° oven and bake for 20 minutes until bubbly and golden brown. Serves 4.

Come Pay Your Due Against The Flu!

Did you know that the single best way to avoid getting the flu is to get a yearly flu shot? During the 2017-2018 flu season, the flu vaccine prevented 7.1 million cases of the flu, 109,000 hospitalizations, and 8000 deaths.1 That’s with only about 42% of adults getting a flu shot! Flu season typically begins around October and can extend well into May but these are just the most common months. You can get the flu any time of year so it is always recommended to get your flu shot early!

For a healthy adult the flu may not seem to be that big of a deal but, the flu can greatly increase the chance of heart attack or stroke. Adults over 35 with a confirmed case of the flu are 6-10 times more likely to suffer their first heart attack and are about 8 times more likely to suffer their first stroke.2,3 Those of high risk stand to benefit from flu vaccines as well. People with type II diabetes who also receive yearly flu vaccines are 30% less likely to have a stroke, 22% less likely to suffer from heart failure, and 19% less likely to have a heart attack.4

Getting a flu vaccine not only helps the recipient but everyone around the recipient. This is especially important for infants under 6 months and those with conditions preventing them from getting a flu shot. Those unable to be vaccinated depend on the rest of us for protection from the flu. The more flu shots that are received, the less flu will spread, and the safer we’ll all be.  So head over to your local Price Chopper or Market 32 pharmacy and get your shot!

    • No! Flu vaccines are made using dead viruses or pieces of the virus’s genetic code that don’t have the capability to cause illness. It takes 1-2 weeks for your body to develop immunity after receiving the flu shot, another good reason to get your shot early this season!

  2. Why do I need to get a flu shot every year?
    •  
    • Each year the flu virus changes, undergoing mutations that can make the previous vaccinations ineffective. Getting a flu shot yearly ensures you have immunity from the latest strain of the flu.

  3. Is getting a flu shot the only thing I can do to prevent catching the flu?
    •  
    • While the flu vaccine is the single best way to avoid the flu, there are many things you can do to protect yourself. Frequent hand washing and avoiding those with the flu can go a long way to prevent it from spreading. If you do fall ill it is important to stay home, cover all coughs/sneezes, and limit contact with those around you.

 With many states implementing a plastic bag ban by the end of this year, shoppers throughout the Northeast region will need to choose an alternative way to bring home their groceries. There are many options to choose from, making it easy to give up the plastic!  

 A plastic bag is only used for an average of 12 minutes, but it can take over 500 years for it to breakdown in a landfill. Reusable alternatives can be used hundreds of times.

Here are 5 substitutes for plastic bags at the grocery store:

Reusable Bags

Reusable bags can carry more groceries per bag, which means less trips from your car to your house! Although there is an upfront investment for these bags, they will save you money, and the environment, in the long run. Over its lifespan, one reusable bag is equivalent to using 1,000 plastic bags.

Reusable Mesh Bags

Reusable mesh bags are just as easy to use as plastic bags. They are breathable too, which helps keep produce fresh. Some produce, such as potatoes and onions already come in mesh bags, so why not use it for all your produce? You can reuse mesh bags from previous produce purchases or buy reusable ones.

T-Shirt Bags

Everyone has a few t-shirts laying around that could use a new purpose. This method is personable, washable, and even requires no sewing. Just cut off the sleeves, which will become the handles, and make the neckline larger. Turn the shirt inside out, and at the bottom of the shirt, cut fringe and tie into knots. Then flip the shirt inside out again to hide the knots, and your t-shirt bag is complete!

 Milk Crates

Milk crates can carry up to 50 pounds, that’s a lot of groceries! They are sturdy, durable, and sustainable. Milk crates typically have a life span of up to 20 years, so you will be able to transport your groceries for many years to come.

 

Cardboard Boxes

You may already have these laying around your house, from online shopping or moving. Cardboard boxes are not only durable and strong, but recyclable too. They come in all shapes and sizes, so you can choose the best one for your next grocery shopping trip.

 

Eliminating single use plastic bags will greatly help in reducing our carbon footprint. Whichever plastic bag substitution you choose, remember to bring it with you next time you’re grocery shopping. Store them in your car or add a note to your grocery list so you don’t forget them!

Lunch-Packing Tips

Make the morning rush a little easier by incorporating these lunch-packing tips into your daily routine:

  • Write a Master Lunch List

Create a go-to list of your kids’ favorite lunch components. Organize it with categories such as protein, fruits and veggies, fiber and whole grains. This will make it easy to mix and match items from different sections to ensure the little ones are eating a balanced meal.

Leverage Your Leftovers

When choosing what to make for dinner, consider what meals may work well for lunches. A hot pasta dinner entrée can become a cold pasta salad for lunch. And leftover rice or veggies can be combined for a nourishing bowl topped with chicken, nuts and cheeses.

  • Pack the Night Before

Add variety to this lunchbox staple by updating the classics with mash-ups of two kid favorites like a pizza grilled cheese. If the kids insist on eating their beloved PB&J, change things up by flattening the bread and rolling it up for a whole new sandwich experience. You can also cut traditional sandwiches with cookie cutters using various shapes that speak to the kids’ personalities and hobbies such as butterflies, trains, hearts or dogs.

Bento Boxes

Kids are more likely to eat their lunch when they only have to open one container. Experiment with bento boxes (properly portioned, home-packed meals originating in Japan) that allow you to separate proteins, fruits, veggies and sauces into organized, kid-friendly compartments.

After-School Snacks

These tasty lunches may keep the kids full until they get home, but then they’re hungry for after-school snacks! Be ready with a chocolaty-orange smoothie or a combination of fresh fruit, cheese and crackers.
